Ingredients
- 1 lb ground beef (80/20 recommended)
- 1/2 medium yellow onion, finely diced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp Worcestershire sauce
- Salt and black pepper, to taste
- 1 lb baby potatoes, quartered
- 2 tbsp olive oil
- 4 cups shredded romaine or iceberg lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup dill pickles, sliced
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, thinly sliced
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp pickle juice
- 1/2 tsp garlic powder (for sauce)
- 1/2 tsp smoked paprika (for sauce)
Instructions
- Preheat the oven to 425°F. Toss the quartered baby potatoes with olive oil, salt, and black pepper, then spread them on a baking sheet and roast for 20 to 25 minutes, flipping halfway, until golden and crispy.
- While the potatoes roast, whisk together the mayonnaise, ketchup, yellow mustard, pickle juice, garlic powder, and smoked paprika in a small bowl to make the special sauce. Refrigerate until ready to use.
- Heat a large skillet over medium-high heat. Add the diced yellow onion and cook for 2 to 3 minutes until softened.
- Add the ground beef to the skillet and break it up with a spatula. Season with garlic powder, onion powder, smoked paprika, Worcestershire sauce, salt, and black pepper.
- Press the beef into the pan slightly and cook for 5 to 7 minutes until browned with crispy edges.
- Divide the shredded lettuce between serving bowls. Top with roasted potatoes, cooked beef, cherry tomatoes, pickles, cheddar cheese, and red onion.
- Drizzle the special sauce over each bowl and serve immediately.
Notes
Use 80/20 ground beef for the best flavor and crispy smash burger texture.
For extra crispy potatoes, soak them in cold water for 20 to 30 minutes before roasting, then dry them well.
Store the beef, potatoes, toppings, and sauce separately if making this recipe for meal prep.
You can add bacon, avocado, or jalapenos for a loaded burger bowl version.
