Ingredients
1 (15-ounce) can pumpkin puree
1 (12-ounce) can evaporated milk
3 large eggs
1 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 box yellow cake mix (about 15.25 ounces)
1 cup (2 sticks) unsalted butter, melted
1/2 cup chopped pecans (optional)
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a large bowl, whisk together pumpkin puree, evaporated milk, eggs, sugar, cinnamon, nutmeg, ginger, and salt until smooth.
3. Pour the pumpkin mixture evenly into the prepared dish.
4. Sprinkle dry yellow cake mix evenly over the pumpkin filling. Do not stir.
5. Drizzle melted butter evenly over the cake mix.
6. Sprinkle pecans on top if desired.
7. Bake for 55–60 minutes, or until the top is golden and the center is set.
8. Cool for 20 minutes before serving.
Notes
Serve warm or chilled with whipped cream or vanilla ice cream.
Store covered in the refrigerator for up to 3 days.
