Creamy Crockpot Pork Chops (Tender & Family Favorite)

Description

Tender thick-cut pork chops seared golden then slow cooked to perfection in creamy garlic parmesan sauce. Rich heavy cream, cream cheese and fresh parmesan create velvety gravy that soaks into every bite. Family favorite weeknight dinner ready when you walk in the door. Serve over mashed potatoes or egg noodles.


Ingredients

Pork Chops & Seasoning:

• 4 thick boneless pork chops (1½-2 inches thick, ~2 lbs)

• Salt & black pepper (to taste)

• 1½ Tbsp Italian seasoning (divided)

• 2 Tbsp all-purpose flour

• 3 Tbsp salted butter (divided)

Creamy Garlic Parmesan Sauce:

• 5 cloves garlic, minced

• 1 cup heavy cream

• 4 oz (½ block) cream cheese, softened

• 1 cup chicken broth (low-sodium)

• 1 Tbsp onion powder

• ¾ cup shredded parmesan cheese


Instructions

2. Pat 4 thick pork chops dry with paper towels. Season both sides generously with salt, pepper, ½ Tbsp Italian seasoning and 2 Tbsp flour. Rub to coat evenly.

4. Heat large skillet over medium heat. Add 1 Tbsp butter, swirl to coat. Sear 2 pork chops undisturbed 2-3 minutes per side until golden brown. Remove to plate.

6. Add 1 more Tbsp butter to skillet. Sear remaining 2 chops same way. Remove all chops to plate.

8. Reduce skillet to low heat. Add final Tbsp butter + 5 minced garlic cloves. Cook 30-60 seconds until fragrant.

10. Whisk in 1 cup heavy cream, 4 oz softened cream cheese, 1 cup chicken broth, 1 Tbsp onion powder, and remaining 1 Tbsp Italian seasoning.

12. Simmer 8-10 minutes whisking occasionally until sauce thickens to coat spoon back.

14. Add ¾ cup parmesan cheese ¼ cup at a time, whisking until smooth after each addition. Taste and adjust seasoning.

16. Spray 5-6 qt crockpot. Arrange seared pork chops in single layer.

18. Pour creamy garlic parmesan sauce evenly over chops.

20. Cover and cook LOW 3-4 hours until pork reaches 145°F and shreds easily.

22. Turn off heat. Rest 10 minutes in sauce.

24. Serve pork chops with plenty of creamy sauce ladled over top.

Make-Ahead: Sear chops + make sauce day before. Refrigerate separately. Assemble morning of.

 

Storage: Fridge airtight 4-5 days. Freezer 3 months.
