Description

Ooey gooey Turtle Caramel Pecan Brownie Cookies made with rich chocolate, buttery caramel, and crunchy pecans. The perfect sweet treat for any occasion.


Ingredients

2 large eggs

1 cup unsalted butter, softened

2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 tsp baking soda

1/2 tsp salt

1 cup granulated sugar

1 cup packed brown sugar

1 cup semi-sweet chocolate chips

1 cup chopped pecans

Caramel sauce (for drizzling and stuffing)

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. In a bowl, cream butter, granulated sugar, and brown sugar until fluffy.

3. Add eggs one at a time, beating well after each addition. Stir in vanilla.

4. In another bowl, whisk together flour, cocoa powder, baking soda, and salt.

5. Gradually add the dry ingredients to the wet mixture. Mix until just combined.

6. Fold in chocolate chips and chopped pecans.

7. Scoop dough, flatten slightly, and place a dollop of caramel in the center. Cover with more dough and seal.

8. Arrange on baking sheets and bake for 10–12 minutes.

9. Cool on the pan for 5 minutes, then transfer to wire racks.

10. Drizzle with warm caramel sauce and garnish with more pecans or melted chocolate.

Notes

Do not overbake – cookies will continue to bake on the sheet.

Use good-quality caramel for best flavor.

Cookies can be stored in an airtight container for up to 5 days.

Freeze dough balls for later and bake as needed.
