Description

This Tilapia in Roasted Pepper Sauce is elegant, flavorful, and surprisingly easy to make. Pan-cooked tilapia fillets are topped with a rich, creamy roasted pepper sauce, garnished with parsley, and ready for a special occasion or weeknight dinner.


Ingredients

1 lb tilapia fillets

3 tbsp butter

1 medium onion, diced

2 garlic cloves

6 oz roasted peppers, chopped

6 oz roasted peppers, pureed

3/4 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper

Chopped parsley to garnish


Instructions

1. Melt 2 tbsp butter in a large non-stick skillet and cook tilapia for 3-4 minutes per side until done.

2. Season the fish with salt and pepper, remove from the skillet, and set aside.

3. Add remaining 1 tbsp butter and sauté onion for 5 minutes.

4. Add garlic, chopped and pureed roasted peppers, and cook 5 more minutes.

5. Stir in heavy cream and Parmesan cheese, then turn off heat and taste for seasoning.

6. Return fish to skillet, spooning sauce over fillets.

7. Garnish with parsley and extra Parmesan before serving.

Notes

Home-baked or store-bought roasted peppers both work well.

Ensure peppers are well-drained to prevent watery sauce.

Cooking fish just until opaque prevents dryness.
