Ingredients
2 boneless skinless chicken breasts
½ teaspoon kosher salt
½ teaspoon dried thyme
¼ teaspoon ground black pepper
3 tablespoons extra-virgin olive oil, divided
2 tablespoons diced shallot
1 garlic clove, minced
2 cups baby spinach, roughly chopped
¼ cup cranberry sauce
3 ounces brie cheese, sliced
Instructions
1. Season the chicken breasts on both sides with salt, thyme, and pepper
2. Slice a deep pocket into each chicken breast without cutting all the way through
3. Heat 1 tablespoon olive oil in a pan and sauté the shallot and garlic for about 30 seconds
4. Add spinach and cook until just wilted, then remove from heat
5. Fill each chicken breast with cranberry sauce, spinach mixture, and brie cheese
6. Secure the chicken breasts with toothpicks
7. Preheat the oven to 400°F (200°C)
8. Heat remaining olive oil in an oven-safe skillet and sear chicken for 3 minutes per side
9. Transfer skillet to the oven and bake for 15 to 18 minutes until internal temperature reaches 165°F (73°C)
10. Remove from oven, rest briefly, remove toothpicks, and serve
Notes
Cut a pouch rather than slicing the chicken fully in half to keep the filling inside
Some brie may melt out during cooking; spoon it back over the chicken before serving
Store leftovers in an airtight container in the refrigerator for up to 4 days
Reheat in a 325°F oven for 10 to 12 minutes for best texture
