Ingredients
1 cup pumpkin puree – adds moisture and pumpkin flavor.
1/2 cup almond flour – for texture and mild nuttiness.
1/2 cup coconut flour – gives a hint of coconut flavor and helps bind the truffles.
1/4 cup maple syrup – provides natural sweetness.
1/2 teaspoon cinnamon – for warmth.
1/2 teaspoon pumpkin pie spice – to enhance the pumpkin flavor.
1/4 teaspoon salt – balances sweetness.
1/2 cup chocolate chips (for filling) – the melted chocolate surprise inside.
1/4 cup sugar (for coating) – creates the truffles’ sparkling effect.
Additional chocolate chips (for pumpkin stems) – decorative touch.
Instructions
1. Combine the pumpkin puree, almond flour, coconut flour, maple syrup, cinnamon, and pumpkin pie spice in a bowl. Mix until smooth.
2. Roll the mixture into small balls (about 1 inch in diameter) and press a chocolate chip into the center of each ball.
3. Roll each truffle in sugar to coat it, giving it a sparkling effect.
4. Use melted chocolate chips to create a small stem on top of each truffle.
5. Place the truffles on a parchment-lined tray and chill in the refrigerator for 30 minutes before serving.
Notes
You can adjust the sweetness by adding more maple syrup or sugar, depending on your taste.
Try rolling the truffles in crushed nuts, cocoa powder, or cinnamon sugar for a unique twist.
These truffles can be made ahead of time and stored in an airtight container in the refrigerator for up to a week.
