A comforting and flavorful Crockpot Chicken Parmesan Soup made with tender chicken, tomatoes, herbs, pasta, and Parmesan cheese for a cozy family meal.
Ingredients
4 garlic cloves, minced
1 green bell pepper, chopped
1/2 medium white onion, chopped
1 can crushed tomatoes (14.5 ounces)
1/2 pound boneless, skinless chicken breast
5 cups low sodium chicken broth
1/2 cup shredded Parmesan cheese
2 tablespoons chopped fresh basil
2 teaspoons chopped fresh oregano
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon red pepper flakes
4 ounces uncooked gemelli or penne pasta
2 tablespoons unsalted butter (optional)
Fresh basil or parsley for garnish
Instructions
1. Combine garlic, bell pepper, onion, tomatoes, chicken, broth, Parmesan, basil, oregano, salt, pepper, and red pepper flakes in a slow cooker.
2. Cook on low for 7.5 hours or on high for 3.5 hours.
3. Remove chicken and shred it with forks.
4. Return shredded chicken to the slow cooker.
5. Stir in pasta and cook on high for 20 to 30 minutes until al dente.
6. Add butter if desired for extra richness.
7. Stir in additional broth if the soup becomes too thick.
8. Serve with Parmesan and chopped herbs.
Notes
Butter adds a richer finish and creamy mouthfeel.
Add extra broth to thin the soup if needed after adding pasta.
