Description

This sausage and cabbage stir fry is a quick one-pan dinner made with browned smoked sausage, tender-crisp cabbage, onion, garlic, and a light savory sauce. It is easy, budget-friendly, and perfect for busy weeknights.


Ingredients

    >1 lb smoked sausage or kielbasa, sliced into rounds>1 tbsp olive oil>1 medium yellow onion, sliced>3 garlic cloves, minced>1 small head green cabbage, thinly sliced>2 tbsp water>1 tbsp soy sauce>2 tsp apple cider vinegar>1/2 tsp black pepper>1/2 tsp paprika>1/4 tsp crushed red pepper flakes (optional)>Salt, to taste>Chopped parsley or green onions, for garnish


Instructions

    >Heat a large skillet over medium-high heat and add the olive oil.>Add the sliced sausage and cook until browned around the edges.>Transfer the sausage to a plate and set aside.>In the same skillet, add the onion and cook for 2 to 3 minutes until it begins to soften.>Stir in the garlic and cook for 30 seconds.>Add the cabbage, black pepper, paprika, and red pepper flakes.>Pour in the water and toss well to combine.>Cover the skillet and cook for a few minutes until the cabbage starts to wilt.>Uncover and continue cooking, stirring often, until the cabbage is tender-crisp.>Return the sausage to the skillet.>Add the soy sauce and apple cider vinegar and stir well.>Cook for 1 to 2 more minutes until everything is hot and coated.>Taste and adjust salt if needed.>Garnish with parsley or green onions and serve warm.

Notes

    >Do not overcook the cabbage if you want the best texture.>Apple cider vinegar brightens the dish and balances the richness of the sausage.>A little soy sauce adds savory depth without needing a heavy sauce.>Serve on its own or over rice for a heartier meal.
