Description
Pumpkin lush is a no-bake pumpkin spice dessert that’s creamy, light, and full of fall flavor. With layers of graham cracker crust, pumpkin pudding, and whipped topping, it’s the perfect make-ahead Thanksgiving dessert.
Ingredients
2 cups graham cracker crumbs
1/2 cup melted butter
8 oz cream cheese, softened
1 cup powdered sugar
16 oz whipped topping, divided
2 packages (3.4 oz each) instant vanilla pudding mix
3 cups cold milk
1 cup pumpkin puree
1 teaspoon pumpkin pie spice
Crushed pecans or gingersnaps for garnish (optional)
Instructions
1. Combine graham cracker crumbs and melted butter until mixed. Press into a 9×13-inch dish and chill for 15 minutes.
2. Beat cream cheese and powdered sugar until smooth. Fold in half of the whipped topping. Spread evenly over the crust.
3. In another bowl, whisk pudding mixes, milk, pumpkin puree, and pumpkin pie spice until thickened.
4. Spread the pumpkin mixture over the cream cheese layer.
5. Top with remaining whipped topping.
6. Garnish with crushed pecans or gingersnaps if desired.
7. Refrigerate for at least 4 hours or overnight before serving.
Notes
This dessert can be made 1–2 days in advance.
Store covered in the refrigerator for up to 3 days.
Serve chilled for best results.
