These tender slow cooker chicken thighs are incredibly easy to make and packed with flavor. The sweet and savory honey garlic sauce creates a perfectly balanced, irresistible dish that the whole family will love.

2 pounds chicken thighs, boneless skinless For serving: chopped scallions, sesame seeds, rice (optional) Sauce: 1/3 cup low-sodium soy sauce 1/3 cup honey 1/3 cup ketchup 6 cloves garlic, minced 1/2 teaspoon apple cider vinegar 1 teaspoon grated fresh ginger 1 pinch crushed red pepper flakes (optional) 2 tablespoons cornstarch


Instructions

Add the chicken thighs to your slow cooker in an even layer. In a bowl, whisk together soy sauce, honey, ketchup, garlic, apple cider vinegar, ginger, and red pepper flakes. Pour the sauce over the chicken and cook on high for 3.5 hours (or low for 6–8 hours). Mix cornstarch and 2 tablespoons cold water to make a slurry, then stir into the slow cooker. Cook on high for an additional 15 minutes until the sauce thickens. Serve the chicken whole or shred with two forks. Garnish with scallions and sesame seeds, and serve over rice if desired.

Notes

This recipe serves 4-6 depending on portion size. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat gently to maintain moisture.
