Description
Soft and chewy homemade gingerbread men cookies with the perfect blend of molasses, cinnamon, and spices. Great for decorating with kids during the holidays!
Ingredients
3 cups all-purpose flour
3/4 cup brown sugar
3/4 cup unsalted butter, softened
1/2 cup molasses
1 large egg
1 tsp vanilla extract
1 tbsp ground ginger
1 tbsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1/2 tsp salt
1 tsp baking soda
**For Decorating**
Royal icing or cookie icing
Mini chocolate chips, candies, or sprinkles
Instructions
1. In a large bowl, cream butter and brown sugar until fluffy.
2. Add egg, molasses, and vanilla extract. Mix well.
3. In another bowl, whisk flour, baking soda, salt, and spices.
4. Gradually add dry ingredients to the wet mixture to form dough.
5. Divide dough into two discs and wrap in plastic wrap.
6. Chill dough for at least 1 hour.
7. Preheat oven to 350°F (175°C).
8. Roll out dough on a floured surface to 1/4-inch thickness.
9. Cut into gingerbread men shapes with cookie cutters.
10. Place on a parchment-lined baking sheet.
11. Bake for 8–10 minutes. Let cool completely.
12. Decorate with icing, candies, and sprinkles as desired.
Notes
Chilling the dough helps it hold shape while baking.
Don’t overbake — they should stay soft.
Let cookies cool fully before decorating.
Store in an airtight container for up to 7 days.
