Description

Hobo Casserole is a hearty, cheesy dish made with ground beef, layers of thinly sliced potatoes, creamy soups, and plenty of cheddar cheese. Topped with fried onions and baked to golden perfection, it’s perfect for family dinners or make-ahead meals.


Ingredients

2 pounds ground beef

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup diced onion

1/2 cup diced red bell pepper

1/2 cup diced green bell pepper

2 pounds russet potatoes

1 (12-ounce) can evaporated milk

1 (10.5-ounce) can cream of mushroom soup

1 (10.5-ounce) can cream of chicken soup

3 cups shredded cheddar cheese, divided

1 cup fried onions


Instructions

1. Preheat oven to 350°F and prepare a 9×13-inch baking dish.

2. Brown ground beef with salt and pepper in a large skillet.

3. Add onions and bell peppers, cook until soft, and drain excess fat.

4. Peel and thinly slice potatoes, soak in cold water.

5. Whisk together evaporated milk, cream of mushroom soup, and cream of chicken soup.

6. Layer half of the potatoes in the dish, followed by half of the beef mixture, half of the sauce, and 1 1/2 cups cheese.

7. Repeat layers with remaining potatoes, beef, sauce, and cheese.

8. Top with fried onions and cover tightly with foil.

9. Bake 75-80 minutes until potatoes are tender, internal temperature 165°F.

10. Remove foil, broil 1-2 minutes until golden, then let rest 10 minutes before serving.

Notes

Add mushrooms or diced ham for variation.

Swap cream of mushroom with cream of celery for a different flavor.

Use reduced-fat cheese and milk for a lighter version.

Season with garlic powder or paprika to taste.
