A zesty, creamy lemon cheesecake bar recipe with a buttery graham cracker crust. Perfect for any occasion.
Ingredients
1 ½ cups graham cracker crumbs
6 tbsp unsalted butter, melted
2 tbsp granulated sugar
4 (8 oz) packages cream cheese, softened
2 ¼ cups granulated sugar
1 cup fresh lemon juice
2 tsp lemon zest
1 tsp vanilla extract
¼ cup sour cream
8 large eggs
Instructions
1. Preheat oven to 325°F and line a 9×13-inch baking dish with parchment paper.
2. Combine graham cracker crumbs, melted butter, and sugar. Press into the baking dish.
3. Bake crust for 10 minutes and let cool.
4. Beat cream cheese until smooth. Add sugar, lemon juice, zest, vanilla, and sour cream.
5. Add eggs one at a time, mixing just until combined.
6. Pour filling over crust and smooth the top.
7. Bake for 45–50 minutes until set but slightly jiggly.
8. Cool to room temp, then chill in the fridge for at least 4 hours.
9. Slice into bars and serve chilled.
Notes
Use fresh lemon juice for best flavor.
Wipe the knife between cuts for clean slices.
Store in the fridge for up to 5 days.
