Description
Gingerbread whoopie pies are soft, fluffy cookies packed with warm spices and sandwiched with rich cream cheese frosting. A festive and irresistible holiday dessert!
Ingredients
Dry Ingredients:
2 ¾ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tbsp ground ginger
1 tbsp cinnamon
½ tsp allspice
¼ tsp ground cloves
1 tsp nutmeg
1 cup light brown sugar, packed
Wet Ingredients:
2 eggs
½ cup unsulphured molasses
½ cup whole milk kefir
1 tsp vanilla extract
22 tbsp unsalted butter, softened
Frosting:
12 oz cream cheese, softened
3 cups powdered sugar
6 tbsp unsalted butter, softened
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices.
3. In a large bowl, cream butter and brown sugar until fluffy.
4. Add eggs, molasses, kefir, and vanilla to the butter mixture. Mix well.
5. Gradually add the dry ingredients to the wet, stirring until a soft dough forms.
6. Scoop 1-2 tablespoon portions onto the prepared baking sheets, spacing well apart.
7. Bake for 10–12 minutes or until puffed and set. Let cool on wire racks.
8. For the frosting, beat cream cheese, butter, powdered sugar, and vanilla until smooth and fluffy.
9. Once cookies are completely cool, spread or pipe frosting onto the flat side of half of the cookies.
10. Top with remaining cookies to form whoopie pies.
11. Store in an airtight container in the fridge until ready to serve.
Notes
You can substitute sour cream or buttermilk for kefir if needed.
Add a pinch of cinnamon to the frosting for extra spice.
These freeze well! Just wrap tightly and thaw before serving.
