Description

These gooey gingerbread cinnamon rolls are soft, fluffy, and filled with a spiced brown sugar gingerbread filling. Topped with creamy eggnog frosting and a decadent brown sugar gingerbread caramel sauce, they are the perfect indulgent treat for Christmas morning.


Ingredients

Dry Ingredients:

4 ¾ cups all-purpose flour

2 ¼ tsp active dry yeast

2 cups light brown sugar, packed

4 tsp white sugar

3 ½ tsp ground cinnamon

2 tsp cinnamon

3 ½ tsp ground ginger

2 tsp ginger

¾ tsp ground allspice

¼ tsp allspice

⅜ tsp ground clove

⅛ tsp cloves

1 ¼ tsp ground nutmeg

¼ tsp nutmeg

1 tsp salt

1 pinch salt

Wet Ingredients:

1 ¼ cups whole milk

2 large eggs

3 tbsp honey

⅝ cup molasses

1 ½ tbsp vanilla extract

1 ⅞ cups unsalted butter, softened

6 oz cream cheese

¾ cup powdered sugar

7 tbsp eggnog or heavy cream

¼ cup eggnog


Instructions

1. Warm the milk until just lukewarm. Add 1 tsp sugar and yeast. Let it bloom for 10 minutes.

2. In a bowl, combine flour, salt, and half the brown sugar.

3. Add in eggs, vanilla, molasses, honey, and activated yeast mixture. Mix to form dough.

4. Gradually knead in softened butter until smooth and elastic.

5. Cover and let the dough rise in a warm place for 1 hour or until doubled in size.

6. Mix remaining brown sugar, cinnamon, ginger, cloves, nutmeg, and allspice with softened butter to form the filling.

7. Roll the dough into a large rectangle. Spread the filling evenly over the dough.

8. Roll the dough tightly into a log and slice into 12 even rolls.

9. Melt butter with brown sugar, molasses, and a bit of cream to make the caramel sauce. Pour into the baking dish.

10. Arrange rolls on top of caramel sauce. Cover and let rise for 30 minutes.

11. Preheat oven to 350°F (175°C). Bake for 30–35 minutes until golden and puffed.

12. Whip cream cheese, powdered sugar, butter, and eggnog until fluffy. Frost warm rolls generously.

13. Serve warm and enjoy!

Notes

Make ahead by refrigerating rolls overnight after cutting.

Let rolls rise at room temperature for 45 minutes before baking.

Best served warm with coffee or eggnog.
