Description

Ginger Garlic Chicken Noodle Soup is a flavorful NYC Chinatown-inspired soup made with tender chicken thighs, fresh ginger, garlic, and aromatic scallions, finished with soy sauce, black rice vinegar, sesame oil, and chili oil for a perfect balance of umami and spice.


Ingredients

Scale

2 lbs boneless, skinless chicken thighs

6 garlic cloves, thinly sliced

3-inch piece ginger, peeled and finely chopped

1 bundle (6-8 oz.) scallions, thinly sliced (whites and greens separated)

4 tsp kosher salt

Freshly ground white or black pepper

10 cups water

8 oz dried curly ramen-style noodles

1 cup sliced carrot, cut into thin matchsticks

To Finish:

¼ cup black rice vinegar

¼ cup soy sauce

2 tbsp toasted sesame oil

Crispy chili oil to taste


Instructions

1. Bring the chicken, garlic, ginger, scallion whites, salt, pepper, and water to a boil in a 4-to-5-quart pot.

2. Reduce heat to medium-low and simmer, uncovered, stirring occasionally, until the chicken is very tender and cooked through, about 15 minutes.

3. While the soup simmers, whisk together vinegar, soy sauce, sesame oil, and chili oil in a small bowl.

4. Remove chicken with tongs and transfer to a cutting board. Shred into bite-sized pieces using two forks.

5. Add noodles and carrot to the broth, following package cooking times.

6. Once noodles are done, return chicken to the pot and rewarm for 1 minute.

7. Taste and adjust seasoning if needed.

8. Divide soup between bowls, garnish with scallion greens, and drizzle with the soy sauce mixture.

Notes

Use fresh garlic, ginger, and scallions for best flavor.

Simmer longer for a richer broth.

Adjust chili oil and vinegar to taste.

Ramen-style noodles are recommended, but egg noodles or soba can be used.

Serve hot for best results.
