Description
French Onion Pot Roast slow cooker recipe delivers fork-tender chuck roast in caramelized onion gravy. 10 min prep, 7 hrs hands-free. Better than French onion soup. Family comfort food classic.
Ingredients
2 lb chuck roast
2 cups red or yellow onions, thinly sliced
3 garlic cloves, minced
1 tablespoon white wine vinegar
1 tablespoon Worcestershire sauce
1/4 cup tomato sauce
1 cup beef broth
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon fresh thyme, chopped (or 1/4 teaspoon dried)
2 teaspoons fresh parsley, chopped
1–2 tablespoons all-purpose flour or cornstarch
Instructions
1. Whisk together tomato sauce, beef broth, garlic, thyme, Worcestershire sauce, and white wine vinegar in a small bowl.
2. Trim excess fat from the chuck roast and season all sides with salt and black pepper.
3. Layer half of the sliced onions in the bottom of the slow cooker and pour half of the sauce over the onions.
4. Place the seasoned chuck roast on top of the onions and scatter the remaining onions over the roast.
5. Pour the remaining sauce evenly over the roast and onions.
6. Cover and cook on low for 7 hours or on high for 4 hours, until the roast is fork-tender.
7. Remove the roast and keep warm.
8. To make gravy, whisk 1 tablespoon cornstarch or flour per 1 cup of sauce and heat gently until thickened.
9. Serve the pot roast with gravy over mashed potatoes and garnish with fresh parsley.
Notes
If the sauce appears greasy after cooking, pour it into a clear container and refrigerate briefly.
Once the fat rises and solidifies, skim it off before making the gravy.
This recipe stores well and tastes even better the next day.
