Description

Give your Halloween table a creepy twist with this vegetarian spaghetti. Dark-colored pasta, cheesy eyeballs, and a rich tomato sauce create a fun and festive Halloween dinner. Quick, easy, and family-friendly, this dish is perfect for vegetarians or anyone looking for a playful yet hearty Halloween meal.

1 handful fresh basil 3 cloves garlic, minced 28 oz tomatoes (canned or fresh) 1 medium white onion, diced 2 tbsp tomato paste 1 tbsp balsamic vinegar 8 black olives, sliced 8 oz pasta noodles (preferably dark-colored) 1 tbsp dark brown sugar 1 tsp Italian seasoning 2 tbsp olive oil 1 tbsp extra virgin olive oil 8 oz fresh mozzarella (for eyeball decoration) 1/4 cup grated Parmesan cheese


Instructions

Heat olive oil in a pan, sauté onion and garlic for 3-4 minutes. Add tomatoes, tomato paste, balsamic vinegar, brown sugar, and Italian seasoning. Simmer for 20-25 minutes. Cook pasta in salted water according to package directions. Drain. Cut mozzarella into rounds and press black olive slices into the center to make “eyeballs”. Toss cooked pasta with tomato sauce. Top with mozzarella “eyeballs” and sprinkle with Parmesan and fresh basil.

Notes

Use black or purple pasta for an extra spooky look. You can substitute fresh mozzarella with small mozzarella balls or any white cheese. Serve immediately after adding mozzarella “eyeballs” to maintain their appearance. This dish pairs well with garlic bread or a fresh salad.
