Ingredients
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp kosher salt
2 tsp ground cinnamon
1/4 cup unsalted butter, melted (baked) OR 1/2 cup whole milk (fried)
1/4 cup granulated sugar
1 large egg
1/2 tsp vanilla extract
1/2 cup unsweetened applesauce (baked) OR 1/2 cup whole milk (fried)
1 1/2 cups peeled, finely diced apples (about 2 medium Honeycrisp or Granny Smith)
Glaze:
2 cups powdered sugar
1/3 cup apple cider or apple juice
1/2 tsp vanilla extract (optional)
Instructions
1. Baked Version:
2. 1. Preheat oven to 400°F. Line baking sheet with parchment, spray nonstick.
3. 2. Whisk flour, baking powder, salt, cinnamon.
4. 3. Mix melted butter, sugar, egg, vanilla, applesauce. Add dry ingredients. Fold apples.
5. 4. Scoop 1 tbsp mounds. Bake 10 min.
6. 5. Whisk thin glaze. Brush half, broil 2-4 min (watch closely). Brush rest, cool 15 min.

9. 1. Heat 1-2 inches oil to 350°F.
10. 2. Mix dry. Combine milk, egg, sugar, vanilla. Stir in. Fold apples.
11. 3. Drop tsp batter, fry 2-3 min/side golden. Drain.

Notes
Tips: Dice apples finely. Fresh baking powder. No overmixing.
Storage: Counter 2 days, fridge 1 week, freeze 3 months (reheat 350°F).
