Description
Crock Pot Bourbon Chicken is tender chicken thighs slow-cooked in a sweet and savory brown sugar, soy sauce, garlic, and bourbon sauce. Finish with a quick cornstarch slurry to thicken the glaze, then serve over white rice with green onions for a better-than-takeout dinner.
Ingredients
Chicken
3 lb boneless skinless chicken thighs
Salt and black pepper, to taste
Sauce
1 cup soy sauce
1 cup light brown sugar
1/2 cup bourbon whisky (or substitute apple juice or chicken broth)
2 tbsp apple cider vinegar
1 tbsp honey
1/2 tsp ground ginger
1/2 tsp red pepper flakes
4 cloves garlic, minced
To thicken
3 tbsp cornstarch
2 tbsp water
To finish
1/2 cup chopped green onions
Cooked white rice, for serving
Optional: toasted sesame seeds
Instructions
1. Place chicken thighs in the slow cooker.
2. Whisk together sauce ingredients (soy sauce, brown sugar, bourbon, apple cider vinegar, honey, ginger, red pepper flakes, garlic) and pour over chicken.
3. Cover and cook on HIGH for 4 hours or LOW for 6 hours.
4. Remove chicken and roughly chop or shred.
5. Mix cornstarch and water until dissolved, then whisk into the sauce in the slow cooker.
6. Add chicken back to the sauce, cover, and let it come back to a gentle bubble so the sauce thickens.
7. Top with green onions (and sesame seeds if using) and serve over white rice.
Notes
Bourbon can be replaced with apple juice or chicken broth for an alcohol-free version.
Thighs stay juicier than breasts in a slow cooker, but chicken breast can be used (cut into chunks).
If you want a thicker glaze, let the sauce simmer a bit longer after adding the cornstarch slurry, whisking occasionally.
