Description
Everything you love about a Reuben sandwich—rolled into crispy, cheesy, golden-brown fritters. Perfect for parties!
Ingredients
1 cup cooked corned beef, chopped
1/2 cup sauerkraut, drained and chopped
1 cup shredded Swiss cheese
1/4 cup cream cheese
1 tbsp Dijon mustard
2 large eggs
1/2 cup all-purpose flour
1 cup breadcrumbs
Vegetable oil (for frying)
Thousand Island or spicy mustard, for dipping
Instructions
1. In a bowl, mix corned beef, sauerkraut, Swiss cheese, cream cheese, mustard, one egg, and flour.
2. Chill mixture for 10 minutes. Roll into 1 tbsp-sized balls.
3. Beat remaining egg. Dip each ball in egg, then coat in breadcrumbs.
4. Chill coated balls for another 10 minutes.
5. Heat oil to 350°F (175°C). Fry fritters in batches until golden brown, about 3 minutes per side.
6. Remove and drain on paper towels. Serve warm with dipping sauce.
Notes
You can freeze the uncooked fritters for up to a month.
Use rye breadcrumbs for a true Reuben flavor twist.
