Description

These no-bake pistachio cheesecake truffles are rich, creamy, and rolled in crunchy pistachios. Perfect for parties or gifting, they’re a bite-sized treat made with real cream cheese, honey, and vanilla. Easy to make and even easier to love!


Ingredients

Scale

1 cup cream cheese, softened

1/2 cup honey

1/4 cup powdered sugar

1 tsp vanilla extract

1 tbsp butter, softened

1/2 cup pistachios, finely ground (plus extra for coating)


Instructions

1. In a mixing bowl, beat cream cheese, butter, and honey until smooth.

2. Add vanilla extract and powdered sugar. Mix until fully combined and creamy.

3. Stir in 1/2 cup of ground pistachios.

4. Chill the mixture in the fridge for 1 hour or until firm enough to scoop.

5. Scoop out small portions and roll into 1-inch balls.

6. Roll each ball in additional crushed pistachios to coat.

7. Place truffles on a parchment-lined tray and refrigerate for another 30 minutes to set.

8. Store in an airtight container in the fridge until ready to serve.

Notes

Use roasted unsalted pistachios for best flavor.

You can freeze these for up to 1 month.

Add a pinch of sea salt or cardamom for extra depth.
