Ingredients

  • 4 boneless, skinless chicken breasts (or thighs, pounded to even thickness)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 6 garlic cloves, minced (or 1 tablespoon minced garlic)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional)
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste


Instructions

  1. Prep the Chicken: Pat chicken dry. Season both sides with salt, pepper, garlic powder, and Italian seasoning.
  2. Sear Chicken: Heat oil in skillet over medium-high. Cook 4-5 min per side until golden (165°F). Remove to plate.
  3. Make Sauce: Melt butter, sauté garlic 1 min. Add broth, scrape bits, simmer 2 min.
  4. Finish Sauce: Add cream, Parmesan, seasonings. Simmer 3-4 min until thick. Add cornstarch slurry if needed.
  5. Combine: Return chicken to sauce, simmer 2 min. Garnish with parsley. Serve hot.
