Description
Soft, protein-packed Cottage Cheese Pumpkin Cake Bars made with pumpkin puree, almond flour, and warm spices. A cozy, healthy fall treat that tastes like pumpkin pie meets cheesecake!
Ingredients
1 cup Cottage cheese
1/2 cup Pumpkin puree, unsweetened
2 large Eggs
2 tsp Honey or maple syrup
1/2 cup Almond flour
1 tsp Baking powder
1 tsp Cinnamon
1/2 tsp Pumpkin spice
1 Pinch Salt
1 tsp Vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
2. Blend cottage cheese, pumpkin puree, eggs, honey, and vanilla until smooth.
3. Add almond flour, baking powder, cinnamon, pumpkin spice, and salt. Blend or mix until well combined.
4. Pour batter into prepared baking dish.
5. Bake for 30–35 minutes, until a toothpick comes out clean.
6. Cool completely before slicing into bars.
7. Store in the refrigerator for up to 5 days or freeze for longer.
Notes
Use full-fat cottage cheese for a creamier texture.
Add more sweetener if you prefer a sweeter flavor.
Top with cinnamon sugar before baking for a light crunch.
