Description

Chocolate Strawberry Yogurt Clusters are a no-bake frozen treat made by mixing chopped strawberries with Greek yogurt, honey, and vanilla, freezing into small clusters, then dipping in melted chocolate for a crisp shell. Keep them in the freezer for an easy snack or healthy-ish dessert.


Ingredients

1 1/2 cups strawberries, chopped

1 cup plain Greek yogurt

1 tbsp honey

1 tsp vanilla extract

1 cup semi-sweet chocolate chips

2 tbsp coconut oil


Instructions

1. Line a baking sheet or plate with parchment paper.

2. Mix chopped strawberries, Greek yogurt, honey, and vanilla extract in a bowl until combined.

3. Scoop about 2 tablespoon portions onto parchment to form clusters (about 10).

4. Freeze 1 to 2 hours until fully solid.

5. Melt chocolate chips and coconut oil in the microwave in 15 to 30 second intervals, stirring until smooth.

6. Dip each frozen cluster into melted chocolate (use a spoon to coat well), then return to parchment.

7. Freeze a few minutes until chocolate sets. Serve frozen.

Notes

Freeze clusters completely before dipping so they don’t melt.

Work in batches (take out a few clusters at a time) during dipping.

Store in an airtight container in the freezer. Let sit a few minutes before eating for best texture.
