Description
Cheesy zucchini breadsticks that are crispy on the edges and cheesy in the center. Low-carb, vegetarian, and totally addictive!
Ingredients
2 medium zucchinis
2 tbsp fresh parsley
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 cup all-purpose flour
1 tsp baking powder
2 large eggs
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
Instructions
1. Grate zucchini and squeeze out moisture.
2. Mix all ingredients in a bowl to form a thick dough.
3. Preheat oven to 400°F and line a baking sheet with parchment.
4. Spread dough into a rectangle about 1/2-inch thick.
5. Bake for 18–20 minutes until golden and firm.
6. Add extra cheese on top and broil for 2–3 minutes.
7. Cool slightly, slice into sticks, and garnish with parsley.
Notes
Serve with marinara or ranch.
Store in fridge for up to 3 days.
Freeze before baking for later use.
