Ingredients
3 lbs boneless, skinless chicken thighs
1 tablespoon brown sugar
2 teaspoons browning sauce
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons salt (or to taste)
1 teaspoon paprika
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 teaspoon allspice
1 yellow onion, chopped
3 spring onions, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 scotch bonnet pepper, seeds removed and chopped
4 garlic cloves, chopped
1 inch fresh ginger, chopped
1/4 cup vegetable oil
2 tablespoons ketchup
1 cup chicken broth
1/2 cup water
Instructions
1. Add chicken, brown sugar, browning sauce, garlic powder, onion powder, salt, paprika, thyme, black pepper, and allspice to a large bowl.
2. Add onions, bell peppers, scotch bonnet, garlic, and ginger. Mix thoroughly, rubbing seasoning into the chicken.
3. Cover and marinate in the refrigerator for at least 1 hour or overnight for best flavor.
4. Remove chicken from marinade and set vegetables aside.
5. Heat oil in a large skillet over medium heat and brown chicken for 1–2 minutes per side. Remove chicken and set aside.
6. Add reserved vegetables to the skillet and sauté until softened and fragrant, about 5 minutes.
7. Return chicken to the skillet and add chicken broth, water, and ketchup.
8. Bring to a gentle simmer, cover, and cook for 30 minutes, stirring occasionally.
9. Uncover and simmer for an additional 10 minutes until the gravy thickens.
10. Serve hot and enjoy.

Dark meat works best for this recipe as it stays moist and flavorful during stewing.
Chicken legs or a whole cut-up chicken can be used instead of thighs.
Adjust the amount of scotch bonnet pepper to control heat level.
