Instructions

1. Layer Onions (5 Min)

Slow cooker BOTTOM: half sliced onions. Salt/pepper roast both sides. CENTER roast. TOP: rest onions + garlic.

2. Sauce Dump (2 Min)

Whisk broth + tomato sauce + Worcestershire + vinegar + thyme. POUR over. Dot butter if using.

3. Low Slow (7h)

LID LOW 7-8h (HIGH 4-5h). Fork tender = done. Lift roast plate.

4. Gravy Magic (10 Min)

Juices crockpot saucepan. Cornstarch slurry whisk. Simmer thicken spoon-coat. Strain onions back OR blend smooth.

5. Shred Serve

1 cup beef broth

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon fresh thyme, chopped (or 1/4 teaspoon dried)

2 teaspoons fresh parsley, chopped

12 tablespoons all-purpose flour or cornstarch


Instructions

1. Whisk together tomato sauce, beef broth, garlic, thyme, Worcestershire sauce, and white wine vinegar in a small bowl.

2. Trim excess fat from the chuck roast and season all sides with salt and black pepper.

3. Layer half of the sliced onions in the bottom of the slow cooker and pour half of the sauce over the onions.

4. Place the seasoned chuck roast on top of the onions and scatter the remaining onions over the roast.

5. Pour the remaining sauce evenly over the roast and onions.

6. Cover and cook on low for 7 hours or on high for 4 hours, until the roast is fork-tender.
